Instructions
Preheat the oven to 425°F (220°C).
In a medium bowl, combine 2 tablespoons olive oil, the chicken, lemon zest, lemon juice, balsamic vinegar, oregano, smoked paprika, shallot, 4 cloves garlic, kosher salt, black pepper, and red pepper flakes. Toss well to coat and marinate for 15–20 minutes.
Toss the potatoes with the remaining 2 tablespoons olive oil on a rimmed baking sheet. Season with salt and pepper, then add the halved lemon. Roast for 20 minutes, or until the potatoes begin to soften.
Remove the baking sheet from the oven. Arrange the marinated chicken around the potatoes, then scatter the bell peppers and onion around the pan in an even layer. Drizzle with an additional tablespoon of olive oil if desired, season lightly with salt and pepper, and roast for another 20–25 minutes, or until the chicken is cooked through and the vegetables are tender.
Meanwhile, combine the sun-dried tomatoes (with a little of their oil), olives, pine nuts, and feta in a small bowl.
In a separate bowl, stir together the Greek yogurt, the remaining garlic clove, and a pinch of salt.
Divide the chicken and vegetables among serving plates. Spoon the feta mixture and garlic yogurt over the top, then finish with the fresh herbs.
Notes
- Chicken breasts or boneless, skinless thighs both work well. - Fresh oregano may be replaced with 2 teaspoons dried oregano. - The additional tablespoon of olive oil used when returning the pan to the oven appears in the source instructions but is not listed in the ingredient list — treated as an optional extra, not part of the divided 4-tablespoon total. - Sun-dried tomatoes are measured including a small amount of their packing oil. - Lemon juice yield assumes one medium lemon. Source: Tieghan Gerard – Easy Greek Sheet Pan Chicken Souvlaki and Potatoes Equipment — Required: Rimmed baking sheet, mixing bowls; Special tools: None Make-ahead: Marinate the chicken up to 24 hours ahead; the feta topping and yogurt sauce can also be made ahead. Freezing: Freeze the cooked chicken and vegetables up to 3 months; prepare the feta topping and yogurt sauce fresh when serving. Common mistakes: Crowding the baking sheet, which prevents browning; underseasoning the potatoes; adding the feta mixture before baking, which dries it out.
Storage
Refrigerate leftovers in an airtight container for up to 4 days. Store the yogurt sauce separately if possible.
